Sichuan style noodles
Ingredients
- Fresh Chinese egg noodles or ramen
- Chinese sesame paste or tahini
- Sichuan pepper
- Soy sauce
- Rice vinegar
- Garlic and ginger
- Chili oil
- Onion and fresh coriander
Directions
- Cook the noodles according to the instructions on the package. Drain and rinse under cold water to stop the cooking process and set aside.
- Mix sesame paste, soy sauce, rice vinegar, chopped garlic and ginger in a bowl. Add a splash of hot water if necessary to thin the sauce
- Fry the pepper in a dry pan until fragrant. Grind them into a fine powder and add to the sauce.
- Toss the cooked noodles in the sesame sauce until well coated. Drizzle with chili oil and mix well.
- Transfer the noodles to a serving plate and garnish with chopped spring onion and fresh coriander. You can also sprinkle some toasted sesame seeds for extra flavor and texture.
