A unique culinary experience 200 meters underground

Yesterday evening, a hundred guests descended almost 200 meters underground for a special culinary experience with the internationally renowned chef Ana Roš. The event took place in the Museum of Coal Mining of Slovenia in Velenje. Traditional Slovenian dishes with a touch of modern cuisine, an exceptional environment and the performance of the ethnic group Katalena made for an unforgettable evening.

Ana Roš, master chef, who ranks among the very top of world-renowned chefs, prepared a special selection of dishes for the dinner in the museum, in which she imaginatively combined local dishes with a touch of avant-garde cuisine. When preparing it, she was inspired by the cooking philosophy of the miners' wives - easy, homemade and delicious.

Upon arrival, the guests were served a piece of bread with salt, which was a common dish of the miners, and in the old days also an expression of welcome. As an appetizer, the invited guests enjoyed a combination of beef tartare with sour cream mousse, anchovies and oysters, and a more classic combination of crispy whitefish with sweet prosciutto, black truffle and egg. Lamb was served for the main course, combined with boletus and celery. Miners ate meat mainly on Sundays and holidays, during the week the dishes were more modest.
Because the underground part of the museum is located almost 200 meters underground the chefs prepared the dishes on the surface and transported them to the venue with mine elevators in special thermal boxes.

"The biggest challenge of the evening was definitely how to maintain the optimal temperature of the dish. We were not allowed to bring fire or other flammable substances into the underground part of the museum, so we prepared the food on the surface, transported it underground in special thermal containers with hot water and then served it on hot plates that we had heated beforehand," added Ana Rosh.

The dinner took place in one of the largest hall of the underground part of the Museum of Coal Mining of Slovenia in Velenje, which, due to its exceptional acoustics, left a special impression on the guests when the members of the ethnic group Katalena took the stage. The evening event was organized by the MasterCard company for cardholders.
