Lentil stew with sweet potato and pumpkin is a simple, slightly spicy dish that is a delicious adaptation of a traditional Moroccan recipe.

Recipe for lentil stew with sweet potatoes and pumpkin:

Ingridients:

  • 1 can of lentils
  • 6 cups of soup stock
  • 1 medium onion, halved
  • 2 cloves of garlic
  • 1 bay leaf
  • ½ teaspoon of turmeric
  • 20 coriander sprigs, tied
  • salt
  • 1 teaspoon of ground ginger
  • 1 large carrot, peeled and diced
  • 450 g of pumpkin and/or sweet potato
  • 3 tablespoons of tomato paste
  • freshly ground pepper
  • 3 tablespoons of chopped fresh parsley

Preparation of lees stew with sweet potatoes and pumpkin:

In a large pot mix lentils, soup base, onion, garlic and bay leaf. Boil and add coriander and turmeric. Lower the temperature, add salt and simmer. After approx half an hour remove the onion and garlic and add the rest of the spices with the exception of the parsley. Let's stew for another half hour, remove the coriander and add the parsley. Arrange on plates and serve. Bon Appetit!
