Ingredients
- Ingredients for the spread:
- half a soft ripe avocado
- 2 tablespoons Greek yogurt
- a pinch of grated garlic
- one and a half teaspoons of lemon juice
- salt and freshly ground pepper to taste For the base:
- a slice of thick sourdough bread
- 1 egg
- 2 tablespoons white vinegar
- 20 g young spinach leaves
- teaspoon dukkah spice
- a little chopped chives
- olive oil
Directions
- First, make the creamy spread – in a small bowl, mash the avocado with a fork, add the yogurt, garlic, lemon juice, and seasoning to taste. Mix until you have a smooth, almost silky mixture.
- Then boil water in a small saucepan, add vinegar. Carefully crack the egg into a small cup, then gently lower it into the boiling water. Cook for 2.5 to 3 minutes – this will keep the yolk runny and the white set nicely. Meanwhile, toast a slice of bread until golden and crispy.
- Heat some olive oil in a pan, add the spinach and sauté briefly - it should soften slightly but retain its color and shape.
- Once everything is ready, it's time to assemble. Spread the prepared avocado spread on the warm bread, then top with the spinach. Carefully drain the poached egg and place it in the middle. Finish with a gentle drizzle of olive oil, a sprinkle of dukkah spices, and chives.
