Blueberry Oatmeal Muffins

- 1 cup of milk
- 1 cup oatmeal
- 1 teaspoon of baking powder
- half a teaspoon of baking soda
- half a teaspoon of salt
- half a cup of butter
- half a cup of honey
- 1 cup cottage cheese
- 1 teaspoon of vanilla extract
- 1 cup blueberries
- 2 tablespoons of coconut sugar as desired
Directions
- Mix milk and oatmeal in a bowl and set aside for 20 minutes.
- Sift the flour and mix it with baking powder, baking soda and salt in another bowl.
- Melt the butter and mix it with honey, cottage cheese and vanilla extract.
- Combine the two mixtures, mix well, then add milk with oatmeal. Mix everything together again.
- Add the blueberries to the mixture and pour everything into the muffin pan. Sprinkle with coconut sugar if desired.
