The word soufflé always makes us drool. This time we present a recipe for a very special souffle, one with zucchini and feta.
Ingridients
• 1 large zucchini
• 150 g of feta cheese
• 150 ml of whipping cream
• 50 g of cottage cheese
• 2 eggs
• salt and pepper
• 200 g slices of prosciutto
• 2 dessert spoons of olive oil
• watercress
Preparation
1. Heat the oven to 175°C.
2. Grate the zucchini, add salt and let it stand for about 10 minutes. Then squeeze out the excess liquid.
3. Mix the cheese, whipping cream, cottage cheese and eggs with a mixer. Add the grated zucchini and season with pepper and, if desired, add a little salt (the cheese is already salty). Divide into four ovenproof lined baking trays.
4. Place the dishes in a water bath and bake in the oven for about 40 minutes. Serve with watercress and prosciutto.
Advice
You can replace the feta with a different cheese, for example Chèvre. Souffles can be served with an excellent salad.
