The foundation
- 200 g of crispy biscuits of your choice
- 150 g of butter
Cream
- 350 g cooking chocolate or dark chocolate (you can replace it with two spoons of cocoa)
- 550 g of mascarpone cheese
- 150 g of powdered sugar
- 300 ml of whipping cream
Preparation
Crush the cookies into fine crumbs and mix them with the melted butter. You can grind the cookies in a blender, coffee grinder or nut grinder, or put them in a bag and crush them with a rolling pin. Spread the cookie and butter mixture over the round cake pan and press it firmly into the bottom of the pan. Place in the freezer until you make the cream.
Cut the chocolate into cubes and melt. Let it cool a little. Whip the whipping cream firmly with a mixer in one bowl. In another bowl, mix the mascarpone with sugar and add the lukewarm melted chocolate. Gradually add the whipped cream to this mixture and gently mix until everything is combined.
Take the cheesecake base out of the fridge and spread the cream evenly on it. Place in the refrigerator for a few hours to harden. So sweet good run!
