Inspired by Middle Eastern sweet treats, this dessert features a blend of cream cheese and chocolate on a cookie base. This cheesecake is inspired by the viral Dubai chocolate bar, known for its combination of cream cheese, pistachio butter and crispy baked dough. Each bite combines the rich taste of chocolate with the crunch of pistachios and the delicate sweetness of cream cheese. The perfect dessert for special occasions or pampering at home.

For the cookie base:

– 300 g butter cookies
– 150 g melted butter

For the pistachio layer:

– 100 g pistachio butter
– 100 g puff pastry noodles (phyllo noodles)

For the chocolate filling:

– 500 g cream cheese
– 200 g dark chocolate (at least 60 % cocoa)
– 100 g powdered sugar
– 250 ml of sweet cream
– 1 teaspoon of vanilla extract

For decoration:

– 50 g chopped pistachios
– 50 g white chocolate

Preparing the cookie base:
1. Crush the cookies into crumbs and mix them with the melted butter.
2. Spread the mixture evenly over the bottom of the cake pan and press to create a compact base.
3. Place in the refrigerator for 30 minutes to harden.
Preparing the pistachio layer:
1. Cut the puff pastry (phyllo) into small pieces and bake until golden brown.
2. Mix the cooled baked dough with the pistachio butter.
3. Spread the mixture evenly over the cooled cookie base.
Preparing the chocolate filling:
1. Melt the dark chocolate over a water bath and cool.
2. Beat the cream cheese with the powdered sugar and vanilla extract until smooth.
3. Stir in the melted chocolate.
4. Whip the heavy cream separately and gently fold it into the chocolate mixture.
5. Spread the filling evenly over the pistachio layer.
6. Place the cheesecake in the refrigerator for at least 4 hours or overnight to set well.
Decoration:
1. Before serving, sprinkle the cheesecake with chopped pistachios.
2. Melt the white chocolate and drizzle it over the top for an elegant look.
