For this recipe you can use fresh or frozen peaches. If you choose frozen, make sure to defrost them completely and drain the excess liquid well!
Peach crumble
Ingredients
- For the crispy crust:
- ¾ cup brown sugar
- ½ cup all-purpose flour
- ½ teaspoon of cinnamon
- ¾ cup oatmeal
- ½ teaspoon of salt
- ⅓ cup unsalted butter, room temperature, cut into cubes For the peach filling:
- 1 ½ kilos of sliced peaches
- ¾ cup sugar
- 2 tablespoons of cornstarch
- ½ teaspoon of salt
- ½ teaspoon of cinnamon
- Juice of one lemon
- 1 teaspoon of vanilla extract
Directions
- Heat the oven to 190°C and prepare a baking dish with a capacity of 1 ½ to 2 liters, such as a 20x20 cm pan or a small gratin pan.
- In a large bowl, combine brown sugar, flour, cinnamon (optional), oatmeal, and salt. Add the butter and rub it into the mixture with your fingers until everything is well mixed and dry.
- In a medium bowl, combine the peaches, sugar, cornstarch, salt, cinnamon (optional), lemon juice, and vanilla. Mix until everything is evenly distributed.
- Pour the peach filling into the prepared pan. Sprinkle the crispy crust over the top and bake for 30 minutes, until the crust is golden brown and the edges are bubbly.
- Serve warm with vanilla ice cream. It is best if the dish is freshly prepared, as the next day the crust will no longer be as crispy.
