Delicious octopus in a salad that conjures summer

An intoxicating salad that, with its enchanting combination of octopus, fresh vegetables and Mediterranean dressing, conjures up the smell of summer and takes you somewhere warm.

Ingridients:

• 1 kg of octopus
• 500g of potatoes
• 100 g of cherries
• 10 black olives
• 10 green olives
• parsley
• garlic
• salt
• pepper
• olive oil
• 2 lemons

Preparation:

Clean, peel and place the octopus in a pot filled with cold water. Add salt and cook for an hour and a half. Cut the well-cooked octopus into thin rings and let them cool. We also boil unpeeled potatoes, which we peel after cooking and cut into thin slices. Cut the cherries in half and add them to the octopus along with the olives. Add oil, salt, pepper, finely chopped garlic and parsley and garnish with freshly squeezed lemon juice. Bon Appetit!
