Do you really need to preheat the oven before putting food in it – or is it just a myth that makes us use more electricity and ruin the taste?

Although preheating the oven may seem obvious or even unnecessary, this step is often what separates a mediocre meal from one worth remembering. Therefore: the oven should be ready before the dish is even placed in it.

Turning on the oven does not mean that it is ready to bake. Although it seems that setting it is enough temperature and insert the dish, in fact, many dishes end up being unevenly cooked, less tasty, or even unsafe to eat because of this.

Heat that makes a difference

Preheating the oven allows for an immediate and correct start to cooking. Once the oven cavity has reached the target temperature, the food begins to cook. to heat evenly. In desserts, this means proper rise, a nice crust, and a soft center. In meat, however, the difference is obvious – the outside is browned, but the juices remain trapped inside.

If the dish is placed in cold oven, it can start to dry out instead of cooking. The result is lean meat, an unappealing texture, and lost flavor. Even in seemingly simple dishes, this step is what determines the final result.

Temperature plays an additional role, especially when preparing raw meat. Food that remains in the area for too long between 5 °C and 60 °C, quickly becomes a breeding ground for bacteria. Preheating shortens this critical time, so the meat cooks to a safe internal temperature more quickly.

The same applies when preparing dishes where the thermal reaction with leavening agents is important. If the oven is not hot enough, the reactions simply do not proceed properly.The result is a dense, heavy and visually unappealing dish.

Exceptions exist, but they are rare.

In certain cases, this step can be avoided. When reheating ready-made meals, such as a slice of pizza, a baked potato, or pasta from the previous day, preheating is not necessary. But even in these cases, an oven that is already preheated will do the job faster and more evenly.
