Cheesecake with chocolate and vanilla
Ingredients
- olive oil or butter, for greasing
- 2 x 280 g of cream cheese
- 150 g powdered sugar, plus extra for sprinkling
- 3 teaspoons of vanilla bean paste
- 3 large eggs
- 35 g plain flour
- 100 g of dark chocolate (70%)
- ½ orange
- spoon of liquid honey
- 200 g of fresh raspberries
Directions
- The cheesecake recipe is easy. Lightly grease the inside of an 18 cm round baking dish and line the bottom with baking paper.
- In a large mixing bowl, beat the cream cheese until slightly fluffy, then add the powdered sugar and vanilla. Beat until smooth, then add the eggs - one at a time, mixing well.
- Sift the flour and beat again.
- Pour a third of the mixture into the lined mold, shake slightly to even out the layers, and then place in the air-fryjer (10 minutes at 200ºC).
- Then grate half of the chocolate and pour half of the remaining mixture over it and smooth it to the edges with a spatula. Bake for another 7 minutes at 200ºC.
- Pour over the rest of the chocolate and mixture, flatten as before, and bake for a final 7 minutes at 200°C.
- Squeeze the orange juice into a bowl, add honey and then mash well with half of the raspberries. Sprinkle over the remaining raspberries, then stir in just before serving.
- Allow the cheesecake to cool, then slice and serve with raspberries.
