Marlenka cake originates from Armenia, where its roots are closely related to the traditional honey cake. However, it became famous mainly thanks to Marlenka Hajrapetjan, who adapted this delicious dessert to modern tastes in the Czech Republic in the 90s. Today it is considered one of the most popular cakes in this part of Europe.

The specialty of the Marlenka cake is the rich taste of honey and caramel, which blend perfectly in the multi-layer biscuit, and each layer is soaked in creamy caramel cream. With its heavenly texture and mild but distinct taste, the Marlenka cake delights everyone - from the youngest to the most demanding sweet tooth.

Ingredients

  • 400 g plain flour
  • 200 g of sugar
  • 150 g of butter
  • 3 spoons of honey
  • 2 eggs
  • 1 teaspoon of baking soda
  • 1 teaspoon of vinegar
  • For the cream:
  • 600 g of condensed milk (caramelized)
  • 300 g of butter
  • 100 g chopped walnuts for decoration

Directions

  1. Preparation of the dough: In a large bowl over steam, melt the butter, sugar and honey until you get a smooth mixture. Then remove from the heat and stir in the baking soda and vinegar. When the mixture has cooled slightly, add the eggs and gradually mix in the flour. Knead a soft dough.
  2. Baking layers: Divide the dough into 6 equal parts. Roll out each part to the size of the cake pan (diameter approx. 24 cm). Bake each layer separately at 180°C for about 5-7 minutes until golden brown. Allow the layers to cool.
  3. Cream: Beat the butter in a mixer, then slowly add the caramelized condensed milk to make a creamy mixture.
  4. Assembling the cake: Spread each layer with cream and place one on top of the other. Spread the remaining cream over the top and sides and decorate the cake with chopped walnuts.
  5. Refrigeration: Place the cake in the refrigerator for at least 4 hours, preferably overnight, to allow the flavors to infuse and the cake to soften.
