1. Don't waste time taking the steak out of the fridge 20 minutes before cooking. This does not bring any benefits.

2. Don't wait until the last minute to salt it. Add the salt at least 45 minutes before baking (even better a day or two before).

3. Use a good meat thermometer because pressing with your thumb doesn't work!

4. Roasting does not retain the juices in the meat (its purpose is to create a tasty crust).

5. Let the steak rest for at least 10 minutes after cooking before slicing.

Ingredients

  • steak weighing about 450 grams and about 4.5 cm thick
  • butter
  • fresh thyme
  • shallot
  • garlic
  • melted butter

Directions

    If it is thicker than 2.5 cm:
  1. Preheat the oven to 200°C.
  2. Heat a pan to 200°C with avocado, vegetable or peanut oil.
  3. Cook the steak for about 2 minutes on each side and then transfer it to the oven for about 2 minutes on each side.
  4. Remove from the oven and finish cooking in the pan.
  5. Don't forget to check the temperature with a meat thermometer.
  6. For a rare (poorly done) steak, remove it from the pan at 46°C (after resting, the steak will be a perfect 52°C).
  7. Add the butter, fresh thyme, shallots and garlic and pour the melted butter over the steak to finish cooking and create a beautiful crust.
  8. If it is thinner than 2.5 cm:
