The magic trick with aluminum foil and hot water

Online culinary gurus have come up with a solution that sounds like a cheap magic trick, but it works surprisingly well. For this quick rescue, you only need three things: your miserably hard avocado, a piece of regular aluminum foil, and a pot of boiling water. The process is almost laughably simple. Wrap the avocado tightly in aluminum foil. Make sure it's really well sealed, because you don't want water to seep into the fruit and turn it into a soggy, watery disaster. Then, gently place this elegant silver packet in a pot of boiling water and leave for five minutes. If you're dealing with an avocado that's as hard as marble, you can give it a minute or so longer, but be careful.

The science behind this magic

What's really going on under that shiny foil? Science tells us that avocados release ethylene gas, which causes them to ripen naturally. When you wrap them in foil and expose them to high temperatures, the heat accelerates the release of ethylene, but the foil prevents this gas from escaping into the air. A five-minute scald in boiling water doesn't technically "ripen" an avocado in the natural biological sense. The heat simply rapidly breaks down and softens its cellular structure, making the flesh soft, as if it were ripe. The illusion is absolutely perfect!

4. Once cooled, simply unwrap, cut and mash with a fork.
