Learn to read the fine print and discover which chocolate really deserves a place in your diet.

Cocoa percentage is just the beginning

Beware of the word "alkalized"

This is the biggest secret that manufacturers try to hide from you. If you read the term on the label “alkali-processed cocoa” or “Dutch process” (Dutch processing), this chocolate is better put back on the shelfThis chemical process is used to reduce the natural bitterness of cocoa and create a darker, more appealing color.

Unfortunately, alkalization also destroys up to 90 percent of the beneficial flavanols that make us eat dark chocolate in the first place. Choose products that contain natural, unprocessed cocoa, because only this one maintains its superpowers.

The order of the ingredients reveals everything

The law requires that ingredients on the label be listed in descending order of quantity. If the first word is on the list “sugar”, you are not holding a healthy snack in your hands, but candy, which pretends to be dark chocolate.

For a quality tablet, it should come first cocoa mass (or cocoa paste), followed by cocoa butter and then sugar. Also, pay attention to the length of the list. The best chocolates need only three or four ingredients.

If you notice on the declaration vegetable oils, artificial sweeteners, flavor enhancers or a long list of emulsifiers, this is sign of low quality.
