Ingredients

  • 4 large lemons
  • 2 cups of white sugar
  • 1 cup of water
  • ½ teaspoon of vanilla extract

Directions

  1. Wash, dry, and grate the lemons — the peel is golden! Then squeeze them and remove all the pips.
  2. Pour everything — lemon juice, zest, sugar, and water — into a pot. Stir until the sugar dissolves. If you can already smell the Amalfi Coast, you're on the right track.
  3. Bring to a boil, then reduce the heat and simmer gently for 30-40 minutes, stirring occasionally, as you watch the mixture magically transform into jam.
  4. Place a small piece of jam on a cold plate. If it hardens, it's ready. If not, cook it for a few more minutes.
  5. Remove the pot and pour the jam into sterilized jars while it's still warm. Seal tightly and wait until it cools completely. Then – voila! Instagram awaits.
