Ingredients

  • 4 eggs
  • ½ cup full-fat fresh cheese
  • ½ cup grated cheese
  • ½ cup diced red bell pepper
  • 2 tablespoons diced onion
  • 2 tablespoons of chopped fresh coriander
  • 1 green pepperoni
  • 1 teaspoon of grated ginger
  • ½ teaspoon ground turmeric
  • ¼ teaspoon salt

Directions

  1. First prepare all the ingredients. Beat the eggs in a large bowl. Add the full-fat fresh cheese and the grated cheese and mix well to get a uniform mixture.
  2. Then add sliced red pepper, diced onion and chopped fresh coriander. Mix everything well. The green pepper will add a slightly spicy flavor to the muffins, so chop it finely and mix it into the mixture as well.
  3. Now it's time to add the spices. Grated ginger, ground turmeric and salt will provide additional taste and aroma. Mix everything well so that the spices are evenly distributed throughout the mixture.
  4. Heat the oven to 180 °C. Lightly oil the muffin pan or line it with muffin paper. Using a spoon, carefully fill each cavity of the baking dish with the mixture. Bake for 15-20 minutes until the muffins are golden brown and firm to the touch.

Serve the mini protein frittatas warm or cold

They go perfectly with a fresh salad or yogurt dressing. You can prepare them in advance and keep them in the fridge for up to 3 days.
