Why are there so many questions surrounding potatoes? Is it true that reheated potatoes can easily become poisonous?

What happens if we eat reheated potatoes?

Once a potato is cooked, it undergoes changes in starch structureThe heat causes the starch granules to expand and soften, making the potato fluffy and easier to digest.

But after cooling, some of this starch turns into something called resistant starch. This form of starch is not broken down into glucose in the body, but acts similarly to fiber – stimulates bowel function and regulates blood sugar. Interestingly, the amount of this starch increases when potatoes are cooled and then reheated.

In other words – Potatoes that have been cooked once, cooled, and reheated may even be healthier than freshly cooked ones.

Are heated potatoes really poisonous?

The greatest fear usually concerns a substance called solanine – a natural toxin that can develop into green or over-stored tubersHowever, solanine is not formed due to heating itself, but rather due to improper storage of potatoes, especially in light and heat.

If it is potatoes properly stored (in a cool, dark, and dry place), no harmful substances are released when reheated. It is only important to avoid potatoes that have green spots or sprouts - these can indeed contain higher levels of solanine and are not suitable for consumption.

The best way to reheat potatoes

When reheating potatoes, the key is to preserve their flavor, texture, and nutrients. The best way is to heat slowly – for example, in a pan with a little oil or butter. This will make the crust slightly crispy and the inside soft and warm.

If used microwave oven, It is recommended to add a few drops of water and cover the dish to prevent the potatoes from drying out. In the oven, it is advisable to bake them at a lower temperature, approximately 160–170 °Cuntil it heats evenly.

When should potatoes not be reheated?

If the potatoes are cooked stood at room temperature for several hours – especially if it has been prepared with milk, cheese or cream – there is a risk of bacteria such as Clostridium botulinum growing. It is better to throw away such potatoes than risk digestive problems.

It is also not recommended to reheat the same portion multiple times, as each heating and cooling reduces the nutritional value and increases the possibility of microbiological changes.

Potatoes as a surprisingly healthy choice

Despite the stereotype that potatoes are a “heavy” food, contains a variety of nutrients, which are beneficial for the body: vitamin C, potassium, iron and B vitamins.
If we prepare it without excessive amounts fats, can be a perfectly balanced part of a meal. Warmed potatoes with cooled starch even contribute to a better balance of the gut microbiota.

A hot potato is not toxic in itself. Instead of throwing it away, you can use a few tricks to turn it into a tasty and even slightly healthier version.
