Pea pesto
Ingredients
- 300 g of pasta
- 200 g of frozen peas
- 1 small clove of garlic
- a few mint leaves
- 60 g of pine nuts
- 60 g of Parmesan cheese
- 4 tablespoons of olive oil
- salt and pepper to taste
Directions
- Boil water in a large pot and add frozen peas. Boil it for about three minutes, then strain it and drain the excess water.
- Chop a clove of garlic, a few mint leaves, salt and pepper to taste.
- Add pine nuts and boiled peas and mash everything together until the desired texture.
- Stir in the grated parmesan cheese and add four tablespoons of olive oil. Mix well.
- In a large pot, cook the pasta according to the instructions on the package. Once cooked, strain them, but save about half a cup of the water they were cooked in.
- Return the pasta back to the pot and mix it with the prepared pesto and add a little of the saved cooking water. Mix well to distribute the pesto evenly.
- Put the pasta with the pesto on plates and, if desired, pour a little more olive oil over it.
