Sweet Rustica has also become unsweet - it has opened the first pinseria in Slovenia on Trubarjeva in Ljubljana. What is a pinsa anyway? This is a top Italian specialty that has become more and more popular recently, even though it has really old roots. The original recipe for pinso dates back to ancient Rome, when its inhabitants prepared special oval breads from different types of flour as a gift to the gods.

Pins has become popular again mainly due to its excellent properties. The dough is extremely easy to digest, so it pinsa is classified as a varied and balanced diet, particularly characteristic of Mediterranean cuisine. The dough is something special: crispy on the outside and tender and soft on the inside. It is made from several types of flour, and the preparation is long and quite complicated (it ripens for at least 48 hours). But the effort is worth it: the dough really tastes amazing.
Such a dough is an excellent basis for an endless selection of gourmet accessories. Only premium ingredients are used - organic tomato sauce, mozzarella di bufala campana, Parma prosciutto, burrata cheese, 'nduja, bolognese mortadella – all of this is then combined in the Pinseria into coordinated top-quality combinations. In addition to pinsa, you will be served in Rustika fresh smoothies or craft beer on tap, and they also know how to prepare one of the best coffees in town. The dessert will also be superb: rustic cakes are delicious, croissants and cookies and they prepare them themselves and bake them on the go, which means that you will get them still warm. For a piece of pince, it's worth a walk along Trubarjeva Street, and you'll be taken care of from morning to late evening.
