Chicken cacciatore, which translates to "hunter's chicken", is traditional italian dish, which combines the rich flavors of tomatoes, peppers, garlic and herbs.

Ingredients

  • 4 chicken thighs
  • salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1 large onion, finely chopped
  • 2 cloves of garlic, chopped
  • 200 g of champignons
  • cherry tomatoes
  • olives
  • capers
  • 1 can of sliced tomatoes (400 g)
  • 1 tablespoon of tomato puree
  • 1 teaspoon of dried oregano
  • 1 teaspoon dried thyme
  • 1 handful of fresh parsley, chopped

Directions

1. Preparing the chicken First of all, it is necessary to wash and dry the chicken thighs well. Then season them with salt and pepper. Heat a large frying pan over high heat and add the olive oil. Place the chicken thighs in the pan, skin side down, and cook for about 5-7 minutes, until the skin is golden brown and crispy. Then turn them over and cook for another 5 minutes on the other side. When the chicken thighs are nicely browned, remove them from the pan and set them aside.

2. Preparation of vegetables In the same pan you cooked the chicken in, add a little more olive oil if needed and fry the onion over medium heat. When the onions are golden brown and soft, add the chopped garlic and stir for about another minute until the garlic is fragrant. Then add mushrooms and cherry tomatoes. Fry the vegetables for about 5 minutes until they become soft and slightly browned.

3. Preparing the sauce When the vegetables are nicely fried, add the can of sliced tomatoes, tomato puree, dried oregano, thyme and bay leaf to the pan. Mix everything well and boil. Once the sauce starts to boil, reduce the heat and simmer for about 15 minutes to blend the flavors and thicken the sauce slightly.

4. Combining dishes When the sauce is ready, return the chicken thighs to the pan. Make sure the thighs are nicely covered with the sauce. Cover the pan with a lid and cook for about 20-25 minutes, or until the chicken is fully cooked and tender. Check occasionally and add a little water or stock if necessary if the sauce becomes too thick.

When the chicken Cacciatore is ready, sprinkle it with fresh chopped parsley for freshness and extra flavor. Serve the dish hot, along with polenta, gnocchi or wide noodles, which soak up the rich tomato sauce perfectly.
