Potato and octopus salad is a great dish for summer days. It is simple and does not require a lot of work and time. We present you a recipe that combines delicious seasonal ingredients with seafood. Octopus and potato salad is prepared quickly, and you don't need any mastery to prepare it.
Salad with potatoes and octopus
Ingredients
- 500 g of octopus
- 500 g of potatoes
- red onion
- 2 cloves of chopped garlic
- 100 ml of olive oil
- 50 ml of wine vinegar
- juice of one lemon
- black pepper
- salt
- 2 tablespoons of parsley, freshly chopped
- some olives
Directions
- Potato and octopus salad is easy to prepare. Clean, wash and cut the octopus into rings.
- Boil the water, add salt, then add the octopus and cook until it softens a little. Do not overcook it as it will become rubbery.
- Once the octopus is cooked, set it aside to cool.
- Peel the potatoes and cut them into cubes.
- Boil the potatoes in water (15 minutes), but be careful not to overcook them. Set it aside to cool.
- Mix olive oil, lemon juice, wine vinegar, salt, pepper and garlic in a bowl.
- In another bowl, mix the octopus, red onion and potatoes and cover them with the previously prepared mixture. Finally, sprinkle parsley and olives over the mixture. So, salad with potatoes and octopus is ready.
