Broccoli falafel with yogurt dressing

Ingredients

  • 1 small head of broccoli (about 300 g)
  • 1 can of chickpeas (400 g), drained and rinsed
  • 1 small onion, chopped
  • 3 cloves of garlic, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground paprika
  • 1 teaspoon of baking powder
  • 3 tablespoons of flour (you can use chickpea flour for a more authentic taste)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Oil for frying (you can use olive or sunflower oil)
  • Ingredients for yogurt dressing:
  • 125 g yogurt (½ cup)
  • 2 cloves of garlic
  • some parsley
  • lemon juice
  • salt
  • black pepper

Directions

1. Preparation of broccoli: Break the broccoli into small florets and cook in boiling water for a few minutes until tender but still slightly crunchy. Then drain it and dry it well. 2. Mixing the ingredients: Combine broccoli, chickpeas, onion, garlic, cumin, coriander, cinnamon, paprika, baking powder and flour in a food processor. Mix until you have a smooth and slightly grainy mixture. Then add chopped parsley and salt and pepper to taste. Mix again briefly to combine everything evenly. 3. Forming falafels: Form small balls or patties (about the size of a walnut) from the prepared mixture. If the mixture is too soft and does not hold together, add a little more flour. 4. Frying: Heat the oil in a pan over medium-high heat. When the oil is hot enough, carefully place the falafels in the pan and fry for about 3-4 minutes on each side until golden brown and crispy. Turn them during frying so that they brown evenly. 5. Service: Serve the broccoli falafel warm. It fits perfectly in pita bread with fresh vegetables, hummus or yogurt sauce. Hint: For a healthier version, you can bake the falafel in the oven at 200°C for about 20-25 minutes until golden brown.
