Chicken breast, which is the main ingredient, is marinated in a mixture of olive oil, garlic and Italian herbs, then fried until golden brown.

Ingredients

  • 4 chicken breasts
  • 1 large egg
  • 3 tablespoons of plain flour
  • 1/4 tsp salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp dried paprika
  • 1/4 tsp garlic salt
  • 3 tablespoons of olive oil
  • 1 brown onion, peeled and sliced
  • 2 cloves of garlic, peeled and chopped
  • 1/2 tsp dried oregano
  • 1 teaspoon paprika
  • 160g of dried tomatoes
  • 1 red pepper, cleaned and sliced
  • 1 tablespoon of tomato puree
  • 90 ml of white wine
  • 240ml of chicken broth
  • a pinch of salt and pepper
  • 90 ml of sweet cream
  • 50g of grated parmesan
  • 90g of fresh young spinach
  • 1 tablespoon of chopped parsley

Directions

  1. Season the chicken breast with salt, pepper, oregano, thyme, paprika and garlic salt. Then roll them in flour to coat them evenly. Heat the olive oil in a large pan and fry the chicken breasts until golden, then remove them from the pan and set aside.
  2. In the same pan, fry the onion until soft and translucent, then add the garlic and fry until fragrant. Add dried tomatoes, paprika and tomato puree to the pan and quickly fry everything together. Deglaze with the white wine and chicken broth, then return the chicken breasts back to the pan.
  3. Cook the dish over medium heat until the chicken is fully cooked, which takes about 15 minutes.
  4. When the chicken is cooked, add the cream and Parmesan and mix well to melt the cheese. Stir the spinach into the pan to wilt, and season to taste. Garnish the dish with chopped parsley and serve hot.
