Aperol Spritz is an Italian wine-based cocktail that is usually served as an aperitif in Italy. It consists of prosecco, bitters and soda. It has gained worldwide popularity, so it is not surprising that it has also impressed confectioners. Cocktails and fine desserts always go well together, so why not combine them into one? Aperol Spritz Cake
Ingredients
- Ingredients for the dough:
- 2 cups flour
- 3 teaspoons of baking powder
- ½ teaspoon of salt
- 2 large eggs
- 1 cup plain Greek yogurt
- ¾ cup vegetable oil
- the peel of one orange
- ⅓ cup fresh
- squeezed orange juice (from about 1 orange)
- 1 cup powdered sugar sugar
- cups of sifted sugar
- 2 spoons of Aperol
Directions
- Heat the oven to 180 °C. Line a 20 cm square baking tray with baking paper and spray it with non-stick spray or oil.
- In a large bowl, whisk together the flour, baking powder, and salt until combined.
- In another large bowl, mix the eggs, yogurt, oil, orange zest, orange juice and sugar.
- Pour the wet ingredients into the dry and mix with a silicone spatula until a smooth mixture without lumps is formed.
- Pour the batter into the prepared mold and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the dough to cool completely.
- For the glaze, beat the sugar and Aperol and pour it over the cake.
