Chickpeas, which are usually associated with hummus and falafel, can also serve as an excellent ingredient for baking. Additionally, chickpea liquid known as aquafaba, excellent substitute for egg whites, which is ideal for vegans or those on special diets.
This unusual combination of ingredients will pamper your taste buds. The combination of nuts, rum, juicy cherries and chocolate is exceptional in itself, but the addition of chickpeas gives the pastry an even creamier texture.
You will never again look at chickpeas as just an ingredient for a savory dish, but as a key ingredient for creating desserts that will delight you with their taste.

Chickpea pastry with chocolate, rum and cherries
Ingredients
- 100 g of cooked chickpeas
- 100 g of walnuts
- 10 fresh dates
- 1 and a half tablespoons of cocoa powder
- 1-2 tablespoons of rum (not flavored)
- 40 g cherries (pitted)
- 20 g of cooked chickpeas
- 2 fresh dates
- 2 bars of dark chocolate
- a little oil
- chopped walnuts
Directions
- Soak the dates in boiling water for half an hour.
- Fry the walnuts in a dry pan, then grind them.
- Clean the dates and chop them in a chopper, adding 3 tablespoons of water to make a paste.
- Add cooked chickpeas and rum and chop everything together in a food processor. If necessary, add a little water gradually, just enough to bring the mixture together.
- Add cocoa and half of the ground walnuts and mix well.
- Then add the remaining walnuts and mix again to obtain a creamy, compact and thick mixture.
- Transfer the mixture to a bowl and place it in the refrigerator.
- Put the cleaned cherries, two cleaned dates (that have been soaked in water) and the rest of the cooked chickpeas into the chopper. Finely chop everything, leaving a few pieces of chickpeas.
- Form balls and add a little of the higher mixture to the center of each one, or spread the dark mixture on baking paper in the shape of a square and place a portion with cherries on top. Then cover the pastry with melted dark chocolate and sprinkle with chopped walnuts.
- The cookies are best prepared the day before and kept in the refrigerator.
