Ingridients:

  • 8 eggs
  • 8 spoons of sugar
  • 100 grams of ground walnuts (or almonds)
  • 2 bags of vanilla sugar
  • 360 grams of sour cream (2 pots) or a combination of sour cream and thick yogurt
  • raisins
  • lemon peel
  • cinnamon
  • rum

Preparation of Christmas walnut roulade without flour
First, soak raisins in rum, to which add a bag of vanilla sugar and grated lemon peel. Before that, you can preheat the oven to 170 degrees Celsius. The next step is to separate the yolks from the whites and make snow from the latter, while beating the yolks with a mixer at maximum speed and gradually adding sugar and the contents of another bag of vanilla sugar. When it becomes foamy, mix it into the snow with a whisk. Then gradually add the ground walnuts and spread the mass on a baking sheet lined with greased baking paper. Bake the mass for 15 to 20 minutes. Once baked, let it cool a little, but not completely cold. Then cover with sour cream and sprinkle drained raisins and cinnamon over it. The dough is then ready and you only need to wrap it in a roulade and place it in the refrigerator for a few hours. Finally, sprinkle the dessert with powdered sugar or chocolate crumbs. Have a good run!
