Mushroom season is just around the corner. Passionate mushroom pickers are already waiting for the first autumn rain, which will create excellent conditions for mushroom growth. This time we found an interesting recipe for you - mushroom croquettes.
Ingridients:
- 1 onion
- 100 g of champignon mushrooms, porcini mushrooms
- 50 g of butter
- 90 g of flour
- 25 dcl of whole milk
- 20 dcl of thickened chicken broth
- 2 eggs
- 300 g of breadcrumbs
- 200 g of grated cheese of your choice
- oil for frying
- salt and pepper
Preparation:
Finely chop the onion and mushrooms. Melt the butter in a pan, add the onion and mushrooms and fry gently for 5 minutes. After roasting, add the flour and stir gently until the mixture turns golden brown. Remove the pan from the heat and gradually add the milk while stirring again. When the mixture has a uniform consistency, add the soup and put the pan back on the heat to thicken it again. Add the cheese, season and let the mixture cool well.
Then with your hands form croquettes and flour them, dip them in egg and then in breadcrumbs. Place the prepared croquettes on a tray and put them in the fridge for a few minutes. Heat the oil to 180 ºC and fry the croquettes for about 3 minutes or until they are golden. Serve a salad on the side. Bon Appetit !
