Recipe: Easy no-bake coconut roulade

Coconut roulade is an extremely tasty dessert that goes wonderfully on the festive table. On top of that, it doesn't need to be baked.

Since it is precise, there is no need to worry about the dough failing or the filling spilling over the edges in an unaesthetic way. This coconut roulade is easy to cut, as it stays firmly together and the glue does not dry out. Recipe for coconut roulade without baking:

Ingredients for a no-bake coconut roulade

For the 'dough':

  • 120 g of sugar
  • a few tablespoons of water
  • 600 g of cooking chocolate
  • 2 dl of milk
  • 250 g ground biscuits

For the filling:

  • 100 g of softened butter
  • 80 g of powdered sugar
  • 100 g of coconut flour
  • juice of one lemon and grated lemon peel

The process of making coconut roulade without baking

First prepare the filling. Mix the butter thoroughly with the sugar and add the rest of the ingredients for the filling. Blend into a smooth mixture. Then prepare the dough.

Mix the water and sugar in a bowl over a fire and cook until a thick syrup forms. Add chocolate and milk. When the chocolate is completely melted, put the bowl aside and add the ground cookies. You will get a thick mixture that you knead thoroughly. Then, on a surface previously sprinkled with coconut flour, roll it into a rectangle a few millimeters thick. Spread evenly with the filling, roll up and place in the fridge for a few hours or, even better, overnight. Cut off the ends of the roulade and decorate it with powdered sugar. Bon Appetit!
