Vegan dessert with berries

Ingredients

  • 1 ripe avocado
  • 120 g of coconut milk
  • 160 g of fresh blueberries (or other berries as desired)
  • 100 g of any nuts
  • 20 g of lemon juice
  • a few mint leaves for garnish

Directions

  1. Cut the avocado in half, remove the stone and scoop out the avocado core with a spoon. Make sure the avocado is really ripe, as this will add softness and a subtle nutty flavor to the cake.
  2. 2.. Combine the coconut milk, avocado pulp and lemon juice in a mixing bowl. You can optionally add half a banana if you want the dessert sweeter, but keep in mind that this will add some calories.
  3. Mix until you get a smooth mixture. To taste, you can add a pinch of cinnamon, a drop of vanilla extract or a little ground coffee or cocoa.
  4. Wash the blueberries and mash with a blender or fork. Instead of blueberries, you can use raspberries, strawberries or blackberries, frozen berries are also a great choice.
  5. In a small jar or bowl, alternate layer of avocado mixture and layer of berries. Repeat the process twice.
  6. Decorate the dessert with nuts and fresh mint leaves.
