Ingredients

  • 1 cup rolled oats or oatmeal
  • 2 large eggs
  • 3 tablespoons of egg whites
  • 1 cup vanilla-flavored sugar-free yogurt
  • 1 large apple
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of baking powder
  • half a lemon peel

Directions

  1. First prepare the dry ingredients. If using oatmeal, grind it into flour using a food processor. If using oat flour, skip this step. Add baking powder and mix well.
  2. Next, mix the eggs and egg whites in a large bowl. Add vanilla-flavored sugar-free yogurt, grated rind of half a lemon and vanilla extract. Mix everything well to get a uniform mixture.
  3. Mix the dry ingredients into the wet ingredients. Stir until everything is well mixed. Peel and grate the apple, then add it to the mixture.
  4. Heat the pan. Make sure that the temperature is not too high, as the pancakes can burn quickly. Let them cook for about 2 to 3 minutes on each side. When you see the edges start to harden and small bubbles appear on top of the pancake, it's time to flip them.
  5. Apple pancakes are very moist in consistency. If you prefer thicker and drier pancakes, simply increase the amount of oatmeal or decrease the amount of yogurt.
