Ingredients

  • 200 g of candied pineapple pieces
  • 80 g of coconut flakes
  • 1 tablespoon of dark rum
  • 180 g of chopped dark chocolate

Directions

  1. Prepare a baking tray and line it with baking paper. This will allow you to easily remove the balls from the pan once they have hardened.
  2. Put the candied pineapple chunks in a blender and blend them until you have tiny chunks that are completely infused with flavor. When the pineapple is crushed enough, transfer it to a bowl.
  3. Add the coconut flakes and dark rum to the bowl with the pineapple. Mix all the ingredients thoroughly to get a uniform mixture. The mixture will have a slightly sticky texture, allowing you to form balls.
  4. Scoop a little of the mixture with a spoon and form small balls. Use about two teaspoons of the mixture for each ball. After forming a ball, carefully place it on the prepared baking sheet. Continue until all the mass is used up.
  5. Add chopped dark chocolate to the bowl and melt it over steam. This process will allow the chocolate to melt evenly without the risk of burning. When the chocolate is smooth and runny, remove it from the heat.
  6. Carefully dip each shaped ball into the melted chocolate and then return it to the baking sheet. The chocolate will provide a crunchy coating that will complement the soft interior of the balls.
  7. Place the balls in the refrigerator for at least two hours or until the chocolate is completely set. This step is important, because the cold chocolate layer will ensure the crunch and full flavor of each ball.
