Recipe: Homemade yogurt and berry ice cream

You don't need an ice cream machine to make refreshing homemade ice cream from Greek yogurt and frozen berries.

Homemade ice cream made with Greek yogurt and frozen berries is great because it's high in protein, low in fat, and full of antioxidants. Refreshing natural flavors fruits and creamy texture provide a healthy yet delicious a summer treat.

Ingredients

    Ingredients for ice cream:
  • 500 g of Greek yogurt
  • 300g frozen berries (such as strawberries, raspberries, blueberries or a mix)
  • 100 ml of honey or to taste
  • 1 teaspoon of vanilla extract

Directions

  1. Take the frozen berries out of the freezer and let them thaw a bit to make them easier to mix.
  2. In a blender or using a stick blender, combine the thawed berries, Greek yogurt, honey and vanilla extract. Mix until you get a smooth mixture. Adjust the amount of honey according to your desired sweetness.
  3. If necessary, add more honey or vanilla extract if you want the ice cream sweeter or more aromatic.
  4. Transfer the mixture to a freezer container. Cover the container and place it in the freezer.
  5. Stir the mixture with a fork every hour to prevent ice crystals from forming and to keep the ice cream creamy. Repeat for 3-4 hours until the ice cream reaches the desired thickness.
  6. Take the ice cream out of the freezer a few minutes before serving to soften it a bit. Serve in bowls or cones.
  7. If desired, the ice cream can be enriched with fresh fruit, chocolate toppings, nuts or granola for additional texture and taste.
