To us, the cookie dough is the most delicious part of baking cookies, and mostly the only reason we do it. In order to escape from the hands of salmonella and similar inconveniences once and for all from now on, we have prepared a recipe that guarantees carefree enjoyment while licking spoons full of raw cookie dough.
Another reason why we looked for a vegan alternative to conventional cookie recipes is our increasing sensitivity to gluten, sugar and other processed and unhealthy ingredients. You won't believe it, but the main ingredient of these healthy, finger-licking bread balls is chickpeas!
Ingredients for 12 tasty balls:
- 500 g of chickpeas
- 3 tablespoons of organic honey
- 1 teaspoon of coconut sugar
- 4 tablespoons raw organic almond butter
- 2 teaspoons of vanilla flavoring
- pinch of salt
- 1 ½ cups chopped dark chocolate
- 1/8 tsp baking powder

Process:
Mix the chickpeas, honey, sugar, baking powder, almond butter, vanilla extract and a pinch of salt in a large bowl with a hand mixer. Mix until a completely smooth and uniform mixture is obtained. Add crushed pieces of chocolate to the resulting creamy mixture, mix well with a spatula and form 12 small balls with your hands. Place the balls on a larger plate, which you have previously covered with baking paper. When all the mass is used, put the balls in the cold and let them stand in the freezer for at least an hour.
