Recipe for healthy cookies
For healthy cookies, we need the following ingredients:
- dried fruit as desired - apricots, plums, dates, figs, cranberries - pb. 1 cup
- 1 cup of nuts of your choice - almonds, cashews, hazelnuts
- 1-2 cups of oatmeal
- 3-5 tablespoons of coconut flour
- 1 tablespoon of honey
- vegetable drink (soybean, rice) or plain milk
- dark chocolate (1/2 - whole) with at least 75 % of cocoa
- accessories: cinnamon, grated lemon peel, a pinch of salt, a teaspoon of tartaric baking powder, 1/2 dcl of rum and, if desired, ground vanilla
- 1 egg or tablespoon of chia seeds
Heat the oven to 200 degrees and toast the nuts first. In the meantime, cut the dried fruit into small pieces and soak it in milk/vegetable drink with rum. When the nuts are baked, finely chop them together with the dark chocolate (they can also be coarsely ground in a blender), and mix them with all the other ingredients, i.e. oatmeal, coconut flour and all the additives, and pour the mass with milk/drink after feeling that the ingredients are getting wet. Add soaked dried fruit to all the ingredients.
Let the whole mass stand for at least 15 minutes, it can also be several hours or even overnight. The egg is mixed into the mass just before baking, but it can be replaced with a spoonful of chia seeds, which are added to the ingredients at the beginning so that they form a gel. Use a spoon to form cookies of the desired shape and spread them on baking paper in a baking tray. Bake them at 180 degrees Celsius. 15 to 20 minutes or until golden brown.
