A heavenly white fluffy center, caught between two sinful dark brown chocolate pads... This is not a dream, this is a whoopie pie, a cookie or a cake, when biting into which sweet tooths have been exclaiming: "Whoopie!" for decades. Although the three-tiered cookie can be mistaken for a macaron at first glance, the appearance is the only thing that unites the sweet vice.
Whoops is a delicious puzzle made from two chocolate biscuit pads and creamy vanilla filling, and the classic recipe is then adapted by pastry chefs to fashion trends and seasons. This is how yuppies shine with a departure from the classics decorated with colorful crumbs, they convince even without the addition of chocolate and take over with the aroma of cinnamon, which is good in autumn.
If adored sweet sin seems like a novelty, it's not. Yuppies are considered a traditional American dessert, characteristic mainly of the American state of Maine and part of the American state of Pennsylvania, where the Amish live. Residents here have been enjoying sugaring for generations with a simple black and white snack, which is served almost everywhere. Although a few years ago they were confined to the New England area, yuppies are now found all over the United States.

The newly discovered cakes today fill the shelves and confectionery showcases of American specialty boutique shops, cafes and pastry shops, where they reigned until recently muffins, cakes on sticks (eng. cake pops) and macrons. She is one of those Magnolia Bakery in Manhattan, where on Halloween we are served yuppies with a delicious cinnamon aroma, and in February they seduce us with heart-shaped drinks. Always made from only the best (organic eggs and local butter), the yuppies experienced a real revival and became real a culinary hit. Let's follow the sweet euphoria and sample them ourselves for a happy welcome to autumn...
A recipe for yuppies
Ingridients
Biscuit:
- 3½ cups all-purpose flour
- 1 teaspoon of salt
- 1½ tablespoons of cocoa powder
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 cup butter
- 2 cups of sugar
- 2 large eggs
- 2 cups whole milk
- 2 teaspoons of vanilla extract
Filling:
- ¾ cup + 1 teaspoon of sugar
- 1/3 cup water
- 1 tablespoon of honey
- 4 egg whites
- ¼ teaspoon vanilla extract
Instructions:
Preheat the oven to 200 degrees. Sift flour, salt, cocoa, soda and baking powder into a bowl. Let's put it aside. Line two baking sheets with baking paper. In another bowl, beat the softened butter and sugar with an electric mixer. Add eggs, milk and vanilla extract. Beat until a uniform mixture is obtained. Slowly add the dry ingredients and mix well. Form balls with an ice cream scoop, which are then placed on baking paper. Bake for about 15 minutes.
Heat ¾ cup of sugar, water and honey in a saucepan and stir until the ingredients melt. Increase the temperature and wait for the liquid to boil. In the meantime, beat the egg whites in a bowl until stiff, adding one teaspoon of sugar to them. When the egg white sets, reduce the mixing speed and slowly add the sweet liquid. Increase the speed again and beat for another 7 minutes. In the meantime, stir in the vanilla extract. We coat the sponge pads with the resulting filling and place them one on top of the other as if we were making sandwiches.
