Ingredients for the Neapolitan ice cream roll:
- 6 large eggs
- 200 g of sugar
- 2 tablespoons of oil
- 2 teaspoons of vanilla extract
- 60 g of all-purpose flour
- 60 g cocoa powder
- 2 teaspoons of baking powder
- ¼ teaspoon salt
- 475 g of softened chocolate ice cream
- 475 g of softened strawberry ice cream
- 475 g of softened vanilla ice cream
- 350 g of chocolate
- 480 ml of cream
Preparation of Neapolitan ice cream roulade:
Heat the oven to 180 degrees Celsius. Line the baking tray with baking paper and grease it. In a large bowl, beat the eggs until foamy (about 2 minutes). Add sugar, oil and vanilla. Mix to obtain a homogeneous mass. Add flour, cocoa powder, baking powder and salt. Mix with a spatula. Pour the dough into the pan, bake for 12 minutes or until the dough is cooked. Unfold a kitchen towel and sprinkle it with cocoa. Turn the prepared dough onto a kitchen towel, remove the baking paper and roll the dough into a roulade using the towel. Place in refrigerator for 1 hour to chill. Unroll the cooled dough and spread it with ice cream, which you spread evenly over the dough one next to the other - first chocolate ice cream, then strawberry and then vanilla ice cream. Smooth the ice cream and be careful not to mix the flavors. Roll the dough into a roulade, this time without the cloth. Place in the freezer for at least 3 hours or overnight.
Break the chocolate into a medium-sized bowl and pour over the hot cream. Stir until the chocolate melts and you get a smooth topping. Place the roulade on a wire rack and cover with the chocolate topping. Place in the freezer for 30 minutes. Good run.
