Homemade chicken pate
Ingredients
- 1 kg of chicken thighs
- 1 onion
- 125 g of butter
- 2 + 1 teaspoon of salt
- 1/3 tsp pepper
- 150-200 ml of chicken broth
Directions
- Put the chicken thighs and onions in the pot. Cover with 2 liters of water, add 2 teaspoons of salt and bring to a boil.
- Reduce the heat and cook covered until the meat almost separates from the bone (about 1.5 hours).
- You can add some vegetables such as carrots, parsley root or celery root, but this is optional.
- Remove the onion and when the thighs have cooled, separate the meat from the bones and cartilage. The skin can be left on or removed.
- Put the meat in a blender, add melted butter, 1 heaped teaspoon of salt, 1/3 teaspoon of pepper and 150-200 ml of chicken broth.
- Mix into a smooth paste. Add salt and pepper to taste.
- Put it in a container with a lid and leave it in the refrigerator to harden.
