Ingredients

  • 1 kg of chicken thighs
  • 1 onion
  • 125 g of butter
  • 2 + 1 teaspoon of salt
  • 1/3 tsp pepper
  • 150-200 ml of chicken broth

Directions

  1. Put the chicken thighs and onions in the pot. Cover with 2 liters of water, add 2 teaspoons of salt and bring to a boil.
  2. Reduce the heat and cook covered until the meat almost separates from the bone (about 1.5 hours).
  3. You can add some vegetables such as carrots, parsley root or celery root, but this is optional.
  4. Remove the onion and when the thighs have cooled, separate the meat from the bones and cartilage. The skin can be left on or removed.
  5. Put the meat in a blender, add melted butter, 1 heaped teaspoon of salt, 1/3 teaspoon of pepper and 150-200 ml of chicken broth.
  6. Mix into a smooth paste. Add salt and pepper to taste.
  7. Put it in a container with a lid and leave it in the refrigerator to harden.
