Recipe: Let's prepare the sweetest Martin's dinner

It is fitting for Martin's Day that a delicious Martin's Goose is abundant on our table, with which we traditionally serve homemade minced meat and sweet red cabbage, and round off the meal with delicious baked apples with walnuts.

Martin's it dates back to the time of our pagan ancestors and marks the time when the cattle returned from grazing, the crops were harvested, and the must matured into wine. Since there was no shortage of food and especially meat at that time, the farmers, who had worked diligently throughout the year, indulged themselves in a bountiful celebration, with which they thanked the gods for a bountiful harvest. Today we celebrate St. Martin's Day November 11, on the day he sings St. Martin. Traditionally, on the day when the must is supposed to turn into wine, we treat ourselves to a delicious crispy roasted goose or duck, red cabbage and millets, and pour everything down with a drop of new wine.

So that we can devote ourselves to the pleasures as soon as possible and spend as little time as possible preparing and planning the Martin's dinner, we have collected all the necessary recipes in one place, which conjure up a superb feast that will make us laugh for a long time.

Roast goose with red cabbage

Ingredients for 4 people:

  • 1 large goose
  • 4 large apples
  • 6 prunes
  • two sprigs of thyme
  • two sprigs of rosemary
  • head of red cabbage
  • 3 dcl of red wine
  • cinnamon
  • 3 spoons of honey
  • salt
  • pepper

Process:
Rub the goose with salt and pepper and place it with the halved apples and prunes in the preheated oven. A kilogram of goose should be baked at 200 degrees for 20 minutes, so a larger goose should be baked for about 180 minutes. First, bake at a higher temperature, and after about 45 minutes, lower the temperature slightly. Bake the goose breast-side down, just before the end of cooking, pour over it with the juice it secreted during baking. When the goose is baked, roast the cabbage in the oven, which is cut and seasoned with cinnamon, thyme, rosemary and honey. Stew the cabbage in a covered container at 180 degrees for at least an hour. Then remove the lid and bake for another half hour. In the meantime, water the cabbage with red wine and sweeten if necessary.

2. Homemade grinders

Ingridients:

  • 1 kg of flour
  • 2 large eggs
  • 1 tablespoon of salt
  • water as needed

Process:
Mix flour, eggs, salt in a large bowl and add enough water to make a smooth dough. Let the dough stand for about half an hour, then roll it out and shape it into circles. Bake them in an oven preheated to 200 degrees. Bake until golden. Chop the baked millets into pieces of any size and serve as a side dish to Martin's goose.

3. Baked apples with walnuts and raisins

Ingridients:

  • 4 apples
  • 4 tablespoons of brown sugar
  • 4 tablespoons of raisins
  • 4 tablespoons of ground walnuts
  • 4 tablespoons of butter
  • cinnamon

Process:
Peel, halve and core the apples. Mix all the other ingredients in a bowl and fill the apple halves with the delicious mass. Bake the stuffed apples at 180 degrees for about 20 minutes.
