Ingredients

  • 1 package of puff pastry (about 250 g)
  • 200 g bacon or ham, cut into cubes
  • 1 onion, finely chopped
  • 1 red pepper, cut into small pieces
  • 100 g grated cheese (e.g. cheddar or gouda)
  • 3 eggs
  • 200 ml of sweet cream
  • 100 ml of milk
  • Salt and pepper to taste
  • A little nutmeg
  • Fresh herbs (eg parsley, chives) for garnish

Directions

Test preparation: Heat the oven to 180 °C. Roll out the puff pastry and place it in a round pie pan. Trim the dough around the edges of the pan and press it evenly against the bottom and sides. Pierce the bottom of the dough several times with a fork so that it does not rise too much during baking. Preparation of the filling: Heat a frying pan over medium-high heat and fry the bacon or ham until crispy. Remove it from the pan and set it aside. In the same pan, fry the finely chopped onion and red pepper until soft and slightly golden. Remove from heat and let cool slightly. Preparation of the egg mixture: In a large bowl, whisk together the eggs, heavy cream and milk. Add salt, pepper and a little nutmeg to taste. Mix well to get a uniform mixture. Assembling the quiche: Spread the fried bacon or ham evenly on the bottom of the dough. Spread the fried onions and peppers over this. Sprinkle with grated cheese. Pour the egg mixture evenly over the top. Baking: Place the pan in the preheated oven and bake for about 25-30 minutes, or until the quiche is golden brown and the filling is set. If you notice that the edges of the dough are baking too quickly, cover them with aluminum foil. Service: Remove the baked quiche from the oven and let it cool slightly. Before serving, garnish with fresh herbs such as parsley or chives. Cut into slices and serve. Quiche is great both warm and cold.
