Recipe: refreshing amaranth, feta cheese and cherry tomato salad

What would you do without cold salads, as they are a great meal on summer days. The combination of feta cheese and delicious vegetables will delight even the most demanding palates.

Due to its simple and easy preparation, this salad will be an ideal dish that will be on your table several times. What could you want more than a tasty and healthy dish.

Avocado, cherry tomato and onion salad

Ingredients

  • a cup of amaranth
  • 2.5 cups of water
  • 1 tablespoon of olive oil
  • 1 red onion
  • 1 avocado
  • a dozen cherry tomatoes
  • 100 g of feta cheese
  • a little salt and pepper if desired

Directions

  1. Boil the amaranth in boiling water, reduce the heat and cook for about 15 minutes. When it is ready, i.e. when it has absorbed all the water, set it aside to cool.
  2. Cut the vegetables into cubes and put them in a bowl. Add cooled amaranth, feta cheese and cover everything with oil and season as desired.
  3. Before serving, mix everything well so that the vegetables are well combined.
