Recipe: Tortilla rolls with feta and sun-dried tomatoes - an autumn lunch to go

Sandwiches made from tortillas are extremely practical, as they stay fresh for a long time and are an ideal choice for a "take away" lunch. Cut into thicker rings, they brighten up any get-together with friends. Simple, yet so very sophisticated.

Ingredients for 4 people:

  • 1 carrot
  • 4 sheets of crispy ice cream
  • freshly squeezed lemon juice
  • salt
  • pepper
  • feta cheese
  • 4 pieces of tortilla
  • 8 slices of cooked prosciutto/smoked chicken breast/avocado
  • a pot of sun-dried tomatoes in oil

Process:

Wash the vegetables, grate the carrot, cut the avocado and lettuce into suitably large pieces. Mix carrot, lettuce, lemon juice, salt, pepper and crumbled cubes of feta cheese in a bowl. Spread the spread evenly among 4 tortillas and cover everything with the chosen meat filling. Vegetarians should reach for avocado slices. Garnish with dried tomatoes and roll into tight rolls. Wrap the rolls tightly with foil and place in the refrigerator for at least an hour.
