Ingredients

    For the cake:
  • 1 ½ cups flour
  • 1 cup of sugar
  • ⅓ cup cocoa powder
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 cup almond milk
  • ½ cup vegetable oil
  • 2 teaspoons of vanilla extract
  • 1 cup hot water
  • For the avocado cream:
  • 2 ripe avocados
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • 1 teaspoon of vanilla extract

Directions

  1. Heat the oven to 180°C and prepare a round baking dish with a diameter of 23 cm. Cover the bottom of the baking tray with baking paper and lightly oil it. Mix flour, sugar, cocoa powder, baking powder, baking soda and salt in a large bowl.
  2. Add almond milk, vegetable oil and vanilla extract to the dry ingredients. Mix well to get a smooth dough. At the end, carefully stir in hot water to make the dough light and liquid.
  3. Pour the batter into the prepared pan and bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake is then cooled in the pan for 10 minutes before being transferred to a wire rack to cool completely.
  4. Cut the avocado in half, remove the stone and scoop out the flesh. Place the avocado flesh in a blender or food processor. Add cocoa powder, maple syrup and vanilla extract. Mix all the ingredients until you get a smooth and creamy texture. If the cream is too thick, a little vegetable milk can be added to achieve the desired consistency.
  5. Carefully cut the cooled cake in half to get two identical biscuits. Spread a portion of the avocado cream evenly on the bottom layer of the biscuit. Place the top layer of sponge cake and cover it with the rest of the cream. Spread the cream evenly on the sides of the cake so that the entire cake is covered.
  6. Decorate the cake as desired. Fresh strawberries, raspberries or sliced almonds are perfect. The cake can also be sprinkled with a little cocoa powder or coconut flakes for added flavor and visual impact.
