Zucchini with oatmeal
Ingredients
- 1 zucchini (350g)
- 1 carrot
- 2 eggs
- 100 grams of cheese
- parsley
- 1 potato
- 1 clove of garlic
- salt
- black pepper
- 1 teaspoon of herbs de Provence
- paprika
- 4 tablespoons of oatmeal
- 2 tablespoons of flour
- olive oil
Directions
- Peel the zucchini, carrot and potato and grate them on a coarse grater. Squeeze the vegetables well to remove excess water.
- Add chopped parsley, crushed garlic, grated cheese, eggs, ground oatmeal (oatmeal) to the grated vegetables. Add salt, pepper, herbs and paprika to taste. Mix all the ingredients well to get a homogeneous mass.
- Shape the mixture into patties the size of your palm.
- Heat the olive oil in a pan. Cook the meatballs over moderate heat for 4-5 minutes on each side until golden brown and crispy.
- Preparing the sauce:2 tablespoons of sour cream or yogurt, 1 tablespoon of mayonnaise, chopped dill, 1 teaspoon of dried garlic and 1 teaspoon of smoked paprika powder. Mix all the ingredients in a bowl to get a uniform sauce.
