An idea for a mini-restaurant Gaudi grew up in the premises of the Ayurvedic center Ayurganica in Ljubljana. Ayurveda does not exclude meat, but according to Ayurveda it is the healthiest diet lacto-vegetarian diet, that means they include in the menu milk and milk products. They get milk and milk products from local farms, and they also buy dairy products in Bovec, where they are known for Bovška sheep and goat curd and cheese. They also make some fresh cheese themselves.
They also offer dishes that are completely vegan, and you will also find dishes gluten free. They use it in cooking fresh vegetables, mainly of local origin.
