Oysters with Parmesan
Ingridients:
• 6 oysters
• 25 g of butter
• 1 clove of garlic
• 1 tablespoon of breadcrumbs
• a bunch of fresh parsley
• salt
• pepper
• 20 g of grated parmesan
Process:
Wash parsley and garlic and finely chop. Clean the oysters under running water and place them in a large pan and add enough water to cover the bottom completely. Cook over moderate heat until the clams open. Those that remain closed are discarded. Remove the pan and let the mussels cool. Set the oven to 250 degrees and wait for it to heat up. Meanwhile, melt the butter in a saucepan at a moderate temperature, add the chopped garlic and breadcrumbs and mix. At the end, add parsley, salt and pepper. Cover the pan with coarsely ground salt. Open the cooled clams and make sure that no liquid leaks out of them. The oyster meat is removed from the shell and placed in the deeper halves of the shells, which are placed in a baking dish and a teaspoon of breadcrumbs, pepper and garlic mixture is added to each. Sprinkle everything with grated parmesan cheese and place in the heated oven. Let the shells bake for about 3 minutes. We serve them immediately with slices of lemon.
Wide noodles with caviar
Ingridients:
• 300 g of wide noodles
• 80 g of caviar
• 1.5 dl of sweet cream
• 30 g of butter
• salt
• pepper
Process:
Cook the noodles according to the instructions on the package. Be careful not to overcook them, because they are tastiest when cooked "al dente". Melt the butter in a small saucepan, stir in the sweet cream and season with salt and pepper to taste. Set aside the shrimp just before boiling. Mix the cream sauce with the drained cooked noodles, add the caviar and mix everything well.
Chocolate souffle
Ingridients:
• 2 eggs
• 25 g of powdered sugar
• 20 g of flour
• 80 g of 70% chocolate
• 70 g of butter
Process:
Heat the oven to 180 degrees. Place a container on the stove and pour about 2 dl of water into it. Place a small bowl on top of this and crumble the chocolate and butter into it. Cook over moderate heat until they dissolve into a smooth mixture. Stir and let cool. Meanwhile, beat the eggs and powdered sugar in a bowl with a mixer. Add the flour to the mixture and finally add the cooled chocolate mixture. Coat the souffle molds thoroughly with butter and sprinkle with cocoa powder. Pour the mixture almost to the top of the dishes prepared in this way and bake for about 10 minutes. While still hot, invert onto a plate and serve. A perfectly baked souffle will be liquid on the inside, and is best served with a scoop of vanilla ice cream.
