Ingredients

  • 600 g of fresh strawberries
  • 100 g of powdered sugar
  • 600 ml of sweet cream
  • 1 teaspoon vanilla paste or extract
  • 1 can (about 400 ml) of condensed milk
  • 50 g crushed meringues

Directions

  1. Preparing strawberry syrup: Wash, clean and halve the strawberries. Heat the powdered sugar in a pan until lightly caramelized. Add the strawberries and two tablespoons of water and cook for about 15 minutes until the strawberries soften and the mixture becomes syrupy.
  2. Strain the mixture through a strainer to remove any solids, and allow the syrup to cool completely.
  3. Preparing the ice cream base: In a large bowl, beat the heavy cream with the vanilla paste or extract until soft peaks form. Gently fold in the condensed milk until smooth. Add the crushed meringues and fold gently into the mixture.
  4. Preparing ice cream: Pour the prepared cream into a container suitable for freezing. Pour the cooled strawberry syrup over the top and gently stir with a spoon to create a marble pattern. Cover the container and place in the freezer for at least 4 hours to completely harden the ice cream.
  5. Remove the ice cream from the freezer about 30 minutes before serving to soften it a bit and make it easier to scoop. Serve in cups or cones and garnish with fresh strawberries and additional crushed meringues, if desired.

Jamie's recipe isn't just ice cream. It is invitation to summer fun, which you can share or enjoy in the quiet of your own garden. In it you will find a balance between richness and lightness, which is rare in homemade desserts.
