Volcanic Nectar is the best-known brand of blue agave sweetener - a sugar substitute, with a low glycemic index and four times sweeter than regular sugar. Agave is mistakenly classified as a cacti by many, but it is a plant from the succulent family that is native to Mexico. Blue agave sweetener (tequila is also obtained from the same plant) contains 90% of fructose. And while hundreds of different agave brands make tequila, there are less than 5 blue agave sweetener brands in the world. Among the best known are Volcanic Nectar, Nekutli and IIDEA. Years ago, all sweeteners on the shelves were the same color. Today they offer us light, dark, premium versions... But the right color is only one - golden, amber. The blue agave sweetener is said to be diabetic-friendly. Similar to honey, but even healthier. Honey has a glycemic index of 83, while Volcanic Nectar is only 27, which means it is absorbed more slowly into the bloodstream.

 

A new sweetening trend

Volcanic nectar is a new sweetening trend. It can be simply poured over pancakes or used as a natural sweetener in a wide variety of elegant desserts. If used in cakes, it can be used to replace half of the sugar in the recipe. Same with popular brownies. Since it is liquid, it cannot be used to replace all the sugar, as the composition of the dessert may collapse. Because desserts to which we add blue agave sweetener brown more quickly, we have to set the oven a few degrees lower than we are used to. Volcanic nectar is not only a welcome substitute in desserts, cakes, cookies, pies... It can be used to perfectly caramelize and sweeten various poultry dishes, sweeten various soups, sauces, salads... For a little imagination, we can list just a few dishes into which you can easily mix the sweetener from blue agave. Among the appetizers, for example, we can point out cheese-herb or sesame sauce for vegetables, baked chicken wings, various cheese boards sprinkled with sweetener, cold appetizers with curry, sweet and sour soups, small cold tortillas... Baked goods that we can't do without Volcanic nectar: apple pie, apricot, carrot or banana bread, various muffins, cookies (it goes especially well with almonds), baked corn and pumpkin... And if we mentioned a few lines higher the main dishes that are not afraid of the new sugar trends: sweetener from blue agave will enrich the taste of various sauces, chilies, roasts, chicken bases with lemons and limes, grilled dishes, noodles (especially those based on Chinese and Thai cuisine), vegetable and potato dishes. Combinations of Volcanic nectar with sauces and marinades based on lemons, pineapples, oranges, ginger, mustard, curry... It can also be added to fish dishes, where we play with exotic sweet flavors. Volcanic nectar can serve not only as a sweetener (for yogurts, smoothies, milkshakes, cocktails, muesli, fruit salads and other cold sweet delicacies), but also as a base for, for example, agave ice cream, agave pudding, marshmallows, and agave fondue...
