Donuts that can be enjoyed without a hint of bad conscience

If we have decided to eat healthier and cut out muffins, cakes, chips, hamburgers and similar unhealthy snacks from our diet, the news that there are also healthier donuts that we can bite into without a hint of bad conscience makes us extremely happy. Especially during the carnival season, when the enticing aromas of traditional sweets spread around us.

Desert was a holiday in our regions that prescribed ritual dishes, as our ancestors also tried to influence the spring fertility of the soil with their diet. Because they wanted a bountiful harvest, they wanted their plates as full as possible and rich food during the carnival season. However, since Lent also awaited them, they had a strong enough reason to enjoy as many traditional delicacies as possible before it.

The prescribed holiday dishes differed in different parts of Slovenia, but everywhere it was considered that a lean holiday is when you have to eat, even if there is poverty in the house. The carnival only happens once a year, and then, in addition to other traditional dishes, it is essential to treat yourself to at least one donut. Let's not reject tradition, but we can bake healthier and still delicious donuts for ourselves and our loved ones.

Ingridients

Yeast:

  • 0.5 dl warm milk
  • 60 g of yeast
  • 20 g of brown sugar
  • 20 g of semolina flour

Dough:

  • 1,000 g of semolina flour
  • 60 g of coconut butter
  • 50 g of brown sugar
  • 4 egg yolks
  • 5 dl warm milk
  • 0.5 dl of rum
  • 3 drops of vanilla aroma
  • lemon peel
  • pinch of salt

Filling:

  • 200 g of homemade apricot jam without added sugar

Topping (instead of filling):

  • dark chocolate
  • almond leaves

Preparation:

First, prepare the yeast, namely dissolve the yeast in a bowl with warm milk, add flour and brown sugar. Mix the ingredients, place in a warm place and let the mixture rise. Meanwhile, mix coconut butter with sugar and egg yolks in a bowl, add milk, rum, vanilla flavoring, lemon peel and yeast. Add the ingredients to the semolina flour, which was previously salted. Knead the dough and place it in a bowl, dust it with a little flour, cover it and leave it in a warm place to rise for 30 minutes. Form a loaf from the risen dough, cut it into small loaves and place them on a tray previously lined with baking paper.

Cover the tray with a kitchen towel and let the loaves rise in a warm place for another 15 minutes. Bake the donuts at 180 degrees for about 50 minutes, turning them carefully during baking. The golden-fried donuts without the lighter center border, which is the result of frying, are filled with homemade apricot jam or coated with chocolate topping and sprinkled with healthy almond leaves.
